Nanny's Cranberry Chicken

I was making Nanny's cranberry chicken tonight for dinner and thought I would share it with you guys. It's super yummy!

2 1/2 lbs chicken
1/4 cup oil
1/2 cup celery (chopped)
1/2 cup onion (chopped)
1 can whole cranberry
3/4 cup catsup
3 Tbl lemon juice

1 1/2 Tbl each: brown sugar, worchestershire sauce, mustard, and vinegar

Brown chicken in oil. Add salt and pepper. Remove chicken to casserole. Saute onion and celery until tender. Add remaining ingredients. Heat through. Pour over chicken. Bake @ 325 degrees for 1 1/4 hours. Baste occasionally.

Also, I'm just going to be posting on Fridays. I was spending a little too much time on here, so I'm just going to post then. "Anonymous" made a comment, so I thought I would let Dad know.

A week with Eli

He was waiting on me the other day with his milk. No more couch time when I'm not there.
He's rolling over everywhere! (Our couch is a reclining couch, so he's really not going to fall off)

This was one day this week right when he woke up. He's been rolling over
when he wakes up and his face is always red.

Eli's following in Sophie's foot steps. Except for she was sleeping and Eli was awake and his
poor little arm was caught in the rail.



I decided to see if the hat still fit Eli. It did. He was probably a month in the top picture and the bottom picture was taken this past week. He didn't even mind the hat at all.

Get your "Sophie" fix...
































Crock Pot Fajitas

Jan has requested that I post this recipe. I hope you like it as much as we do!

Ingredients:
1 1/2 lbs flank steak, cut into 6 pieces
1 medium onion, chopped
1 green bell pepper, sliced
1 jalapeno pepper, seeded and chopped
2 garlic cloves, pressed
1 Tbsp chopped fresh cilantro
1 tsp chili powder
1 tsp ground cumin
1 tsp ground coriander
1 tsp salt
1 can diced tomatoes, drained
1 can green chiles, chopped
Flour tortillas
Toppings: shredded cheese and sour cream

Instructions:
Place steak in the bottom of crock pot; top with onion and next 10 ingredients. Cook, covered on low for 8-10 hours (or on high for 4-5 hours). Remove meat and shred with a fork. Serve with tortillas and desired toppings.

God really does know me

Kaleb is saying "bye - bye" to the afternoon nap. My exhaustion level is pretty high these days already, without the prospect of no rest for me during the day. So, after Michelle prompted me to pray about this, I asked God to make me EVER aware that Kaleb is a blessing. Yesterday afternoon, Kaleb was playing in the living room and I overhead him saying,"Stay Gog..fence.." He was playing his first game of pretend! Soon after, Kaleb and I were folding laundry andI was humming the Winnie the Pooh theme song. Kaleb said, "pooh". I then hummed Elmo's world and Kaleb said, "elmo" ...We were playing a riveting game of 'Name that tune'. I then tried to sing the Elmo song, leaving out a word and Kaleb filled it in..Elmo loves his..."FISH" Kaleb was singing with me! Instantly God reminded me that playing pretend and singing were two of the skills I was most eager for Kaleb to aquire. God is so kind to cause this to happen! Before i knew it I was weeping, worshipping God for his goodness! God truly does know us!

Sweet Sophie

Last week God turned Sophie "on" . Monday she slept and ate and played just a little. This is basically what she has always done. However, when she woke up Tuesday she discovered her fist, began playing wildly and hasn't stopped since.

Memorization plants God’s truth in your heart, giving you nourishment for your soul, encouragement for your faith, and defense against temptation. As you get started, a few tips could help. First, make a plan. If you don’t make a commitment, it probably won’t happen. Second, a partner can keep you on track. Third, pray about it. House Update


We are scheduled to close on our house on October 15. On the inside, the tile is laid, the cabinets are in, and all of the carpentry work is almost complete. On the outside, the guttering is on and the siding is complete. FYI...the garage door is supposed to be white and the front door is supposed to be solid. It won't be long now (Dad...we'll be out of your basement soon!). We are so thankful to God for Dad's generosity in allowing us to live in his basement! Thanks Dad (or should I say "annonymous)!

Luke the Duke

Psalm 127:3 reads "Behold, children are a heritage from the Lord, the fruit of the womb, a reward." In the midst of dirty diapers, temper tantums, and sleepless nights I am tempted to think otherwise. However, God is so kind to remind me that they are a GIFT, a HERITAGE, a REWARD! Well, Abigail was playing "animals" and we were all some kind of animal. I think Abigail was a monkey and I'm not too sure what Michelle was. I think she was also a monkey. Fun times at Pop's work!

I miss you...

Abby, my nose is still snotty so i can't come and see you. Even though i said i would not rub it on you, mommy still won't let me come. This morning, i kept trying to rub snot on Eli. I am glad God made me an immune system and i am getting better though. :) I get to take this yummy pink medicine twice a day! See you Sunday? I read some good stories on the pbs website today and I think you would like them. Maybe we can get together and watch elmo next week? Eli and luke can come too and we can watch them roll over. Sophie ( or Sofa ) will probably just sleep....

Challenge Accepted!

House update: Our house has been on the market for almost a year and it still hasn't sold. It's our driveway that makes most people not want to buy it. There is nothing we can do about that. I am thankful that God hasn't allowed our house to sell, so Matt and I will trust in God more and that we will put our hope in Him! Matt reminds me of this daily. Thanks Stephanie for this great challenge!
Michelle you're next.
Note: I'm thankful for a lot, i mean a lot of other things. I was just thinking about our house at the moment.

Challenge to the sisters...

I was reading this morning ..." I will praise the name of God with a song;I will magnify him with thanksgiving" Psalms 69:30. And the idea struck me that when we thank God for what he has done that he will appear bigger, that it can highlight his goodness. Obviously God is God regardless of whether or not we see it, but it is amazing that we have the ability to make him known for who he is. S0, my challenge girls is that whenever we post that we thank God for some aspect of who he is, something he has done, et.c You know the drill. If you blog and fail to do that, then you have to pay the other two sisters $5. Oh and anyone who comments before you fix it you have to pay$1. Now this should make things entertaining as well as God glorifying...Who's in? :)

I will start: I am thankful to God that Kaleb is such a joyful little boy! Tag, Jan you are it.....

Kaleb's First Shave

This is Kaleb's very first lesson in shaving. He just kept saying, "face", but seemed to like it. He was pretty excited to come and show mommy.

Kaleb is sick this weekend. :( He has a virus and an ear infection, so this was a fun diversion for him.

I've been trying to find Eli a toy with teething things on it's hands and feet that you can machine wash and I finally found one at Walmart. He was sleeping with it and he just woke up in this picture. It was so cute! I love that he is sleeping with something. It says "I love my Daddy."Adorable!

Eli is now rolling over from his back to his belly.

First Tractor Ride

Sophie's 2 month check up



The doctor said she looked just "perfect" weighing in at 12 pounds and 22 inches long. She took her 4 injections like a champ and then slept almost all day. By the way Jan, this is a mohawk. I had to zoom in on Eli's to see that he had hair at all :)

Eli took his first ever 4-Wheeler ride with Pop's today. He loved it.
